It is a wine that presents itself with a garnet red ruby colour, Intense with purplish reflexes. Clean and with a generous body, it shows its extracts with a tight and glyceride corpus, which drips from the sides of the glass.
At the nose, there is a pacific invasion of matured red fruits perfumes, nutmeg, fresh mac, followed by a sensation of black berry and plum jam. The smell spectrum is closed with a note of cherry preserved under spirits, dark chocolate and rhubarb.
In the mouth, it is a joy of red berries such as plum, blue berry, with a wraparound and silky end.
The Nero per Sempre is strong, balanced, persistent, and it is pure art in a liquid form.
30 years old vineyards, Handpicked grapes, raisining of the grapes in boxes from 35 to 45 days in the fruit cellar, soft destemming, fermentation at a 22/24°C temperature for 20 days. Maceration of the grapes until complete depletion of the skins for another 10/15 days, Racking of the wine, Aging of 15 months, 50% in stainless steel and 50% in wood barrel of 20 hl e Tonneaux of 5 hl, then 10 months of bottle aging.
The gastronomic pairing, as predictable, is perfect with medium rare grilled red meats, roasted furred game, lamb chops, but can also be matched with cold cuts with a distinctive taste, such as duck speck or goose ham.
Best to be served at a temperature between 16 and 18° C, in a wide wine glass.
